Mexican Scramble

    Time for a little breakfast

    * 2 eggs, large
    * 2 egg whites, uncooked
    * 2 tablespoons green onion, chopped
    * 2 1/2 tablespoons lettuce, romaine, chopped
    * 3 tablespoons refried beans, fat free, w/mild chilies
    * 2 tablespoons cheddar cheese, low-fat, low-sodium
    * 1 ounce cheese, monterey jack, fat free
    * 1 low carb whole wheat tortilla, 6"
    * 1 teaspoon unsalted butter
    * 2 tablespoons salsa
    * 8 fluid ounces milk, fat-free



    Preparation

    * Whisk eggs and egg whites. Whisk in onion, lettuce, refried beans and cheeses - diced or shredded.
    * Cut tortilla into small pieces and mix into egg mixture.
    * Heat a skillet to medium heat and melt butter. Add egg mixture and scramble to desired firmness.
    * Transfer to serving plate and top with salsa. Add hot sauce or jalapeno peppers if desired.
    * Serve with a glass of milk.
