Pre-Fishing for a Tourney

When you pre-fish for a tourney, how far ahead of time do you like to do it (considering there are no off limits)?

Do you stick some of the fish in order to tell what size of fish you are on?

Or do you not hook any fish so they won't get the soremouth?

Just curious what everybody does.
