    I found some a bag of catfish in the back of the freezer. After cutting off about half because of freezer burn I decided to make catfish balls. I used my gar ball recipe of yellow corn meal, toaster crumbs, salt, pepper, garlic, jalepeno, egg yolk, a touch of peanut oil and a little corn starch as a binder. Being lazy today, I threw it in a food processor and hand mashed it into balls. A little time in some hot peanut oil and it was ready. I've never tried it with catfish. Damn good and I'll pat myself on the back. Total time fom start to eating: 15 minutes. Since I had the processor out and the peanut oil hot, I also made crab rangoon using dough sheets I had bought at Trader Joe's. 20 minutes for that. The wife's happy because she doesn't have to cook tonight. The thing that makes it all taste good. Kraftig beer. Billy Busch kept the original recipes that came form Germany in the family and he started a new brewery. It's selling like crazy in St. Louis because it's better than the InBev products. Time for another fish ball.
